House rules are the numbers a Hong Kong table sets for itself: the minimum to win, a cap, how flowers count, how the dealer is treated, how faan becomes points (faan only, half spicy or full spicy), who pays a discard, and whether a chicken hand may win. The rules fix what a hand is; the table fixes what it is worth. Here are 5 real sheets, setting by setting.
