It is the table that turns a hand’s faan total into the points that actually change hands. Hong Kong tables use one of two: an additive sheet, where the faan simply is the payment, or a doubling curve — 半辣上 half spicy or 辣辣上 full spicy — where each step up roughly doubles the money.
Counting a hand and paying for it are two separate steps, and "faan chart" can mean either one. The first step is the list of hands and their faan. The second — this page — is the conversion: what a 3-faan hand, or a 10-faan hand, is worth in points.
There are two conventions, and a table picks one:
