Hong Kong tables mostly differ on four things, not on the tiles: the minimum, the cap, the curve that turns faan into points, and who pays a discard. Those choices are the variants. Run one full-flush hand through 5 real sheets and the player who threw the winning tile pays anywhere from 8 to 512 points — same tiles, same win.

The four Hong Kong sheets share one price list for the hands (the full flush counts the same on all four); they differ in the minimum, the cap and the payment.
